Our renowned PDO Blue Stilton®, for example, was announced UK Supreme Champion at the 2024 International Cheese and Dairy Awards (the Oscars of the cheese industry) beating more than 4,000 varieties to be named the best in the world.

Our Aged Rutland Red® took the Gold Supreme Champion title at the 2024 British Cheese Awards. And Clawson Farm’s Blue Shropshire was named Supreme Champion at the 2022 International Cheese and Dairy Awards.

Our Favourites

PDO Blue Stilton®

Clawson Farms is one of just five dairies in the world legally able to make Blue Stilton® with Protected Designation of Origin (PDO) status. The King of Cheeses, our Supreme Champion winner is a stunner, and a pure expression of the beautiful milk delivered from our partner farms. Creamy, and a touch crumbly, our PDO Blue Stilton® has threads of distinctive, savoury blue veining throughout. Each wheel is hand-turned and hand-graded, and unique in its own way. This is a cheese that cannot be replicated anywhere else. No cheeseboard should be without it. But it’s also a delicious ingredient or ‘seasoning’ for home cooks and chefs, bringing greater depth to your favourite dishes – from pizza and pasta to cocktail garnishing!

Shropshire Blue

A stunner. Shropshire Blue gains its golden orange hue from natural annatto extract, taken from the berry of the achiote tree. This award-winning cheese is fudgy, melting, and a touch tangy. Its creamy, mellow, but characterful flavour is a gentle introduction to the wonderful world of blue cheese, and it’s certainly won a lot of hearts in the foodie world. You probably won’t find a better blue for melting into a toastie (with a dollop of red onion marmalade).

Rutland Red®

Territorial cheeses are some of the oldest recorded foods in British history, with Red Leicester traditionally crafted by farmhouse dairies as a way to use up leftover milk from Stilton production – ensuring nothing went to waste.
The careful way territorials are churned and aged pays homage to this heritage, and their flavour is a reflection of the landscape in which they’re made.
A touch sweet, with hints of caramel, and a savoury, moreish bite, our award-winning Rutland Red® is adored by everyone who tries it. This really is a very special cheese, incomparable to what you might have tried before. After it’s been filled into its mould and cloth-bound, we liberally hand butter the outside with clarified butter, before maturing it for six months. All that attention is certainly worth it, making Rutland Red® a real head-turner, with an inimitable firm, flaky texture.

White Stilton®

Very different to its Blue Stilton® cousin, being crafted without introducing the punchy penicillium roqueforti which creates those distinct ribbons of blue. We think this wonderful cheese stands alone as a deliciously versatile companion in the kitchen.
One of the purest expressions of our premium quality milk, Clawson Farms’ White Stilton® has a crumbly nature and gentle tang, making it an excellent British alternative to feta or halloumi. Our White Stilton® is in its element baked into quiches and tarts, or sprinkled generously over salads. You can even use it to make cheesecakes!

Blended Cheese

Festival®

Our customers cannot get enough of this exotic, fruity White Stilton®. Fiery bites of ginger and tropical mango are a match made in heaven. This cheese, especially, lends itself to dessert-making.

Crimson®

In one of the nation’s undisputed favourite fruit and cheese combinations, our traditional crumbly Wensleydale is freckled with pops of juicy cranberries. We rather like it enjoyed on a digestive biscuit as a quick sweet treat or as a festive cheesecake serviced with a dollop of cream.

Lemon Zest®

Our creamy, crumbly White Stilton® is infused with the heady, aromatic, zesty notes of lemon, which will transport your taste buds to the sunnier climes. This is a unique cheese that really does lend itself to pud-making. In summer, it’s glorious sliced onto a digestive biscuit with a few slices of ripe strawberry. In winter, the cheese brings a much-needed brightness to the kitchen on the dullest of days.

Sunburst®

Sunburst blends our gently salty, melt-in-the-mouth White Stilton® with plump, juicy bites of apricot. This goes well with a chilled glass of stone fruit-forward white wine such as Viognier, or a bubbly glass of Cremant. It’s also rather delightful with a wedge of fruit cake.

Blueberry Fayre®

We tumble sweet blueberries into our velvety White Stilton® to craft this beautiful cheese, which certainly makes an impression. A light red wine, such as Pinot Noir, pairs well with Blueberry Fayre®, which also sits nicely on a digestive biscuit with a thin layer of lime marmalade or lime curd.

Scarlet®

This one’s a showstopper, giving our gorgeously creamy White Stilton® a sweet kiss with pops of sweet cranberry. We like it paired with a red chilli jam or chutney, which bring out the tart, juicy nature of the berries.

Windsor Red®

A vibrant cheese, dappled with Port, offering a delightful blend of fruity and tangy flavours. Its unique marbling creates a visually striking and flavourful experience as part of a traditional cheeseboard.

Savoury Blends

Caribbean Blazer®

A thoroughly modern spicy cheese that definitely gets people talking. Our mild Cheddar brings gentle notes of cream, butter and milk, with sweet heat running through from the addition of Scotch Bonnet chilli relish and red peppers.

Cotswold®

Cheese and onion will never go out of fashion – and neither will this favourite. We combine our smooth, rich, traditional Double Gloucester with sweet roasted onions and a touch of chive for a familiar taste the whole family will love. It’s always a talking point on cheeseboards, and bakes beautifully too.

Innkeepers Choice®

Our homage to the British Ploughman’s, combing chunky pieces of pickled onion and snips of chive with mature Cheddar cheese. All you need to complete the picture is slices of apple, a dollop of piccalilli, and maybe a favourite Melton Mowbray pork pie.

Flaming Pepper®

For the cheese lover who likes to turn the dial up on heat. We mix Cheddar with just the right amount of hot peppers and spices to ignite the senses and tingle the taste buds, without taking away from the flavour of the cheese. Try melting it over pizza.

Charnwood®

The warm, cosy, savoury flavour and aroma of smoke ripple through this Cheddar, which is finished with a dusting of paprika. Sweet and spicy chutneys are stunning with a piece Charnwood®. And no barbecue should be without it. This cheese transforms burgers, hotdogs and even roasted vegetables into a gourmet experience.

The ultimate ‘cheese sandwich’, Huntsman® is a serious statement cheese. Could it be the centrepiece of your next grazing board? We think so. We craft Huntsman® by carefully hand layering our world famous Blue Stilton® between rich, smooth Double Gloucester cheese. There’s nothing else like it.
