Ingredients
This is a really easy, healthy vegetarian recipe for the whole family to enjoy – ideal for busy mums on the go. This dish combines spicy flavours, with the smooth taste of Clawson Paneer cheese and contains lots of texture and colour making this a really tasty meal. Anjum shows you how you can change the recipe to suit your taste: “You can tailor-make these by adding pickled jalapenos (squat green chillies), kidney or black beans or even griddle/cook some sliced asparagus or slices of courgettes. “I love fajitas as you can add whatever you want and they are really quick too.”
Makes 4 large fajitas, can be doubled easily.
2 tbs. vegetable oil
1 medium red onion, sliced
1 medium green pepper, sliced
150g paneer, cut into 1cm cubes
4 tsp. mixed fajita seasoning
½ ripe avocado, peeled and diced
6 tbs. sour cream or low fat crème fraiche or to taste
8 rounded tbs. salsa (choose the heat according to your own taste preferences) plus extra for serving
80g Clawson Paneer cheese
4 large flour tortillas
Method
Heat a large cast-iron or griddle pan until hot. Add the onions and peppers and cook for 1 minute. Keep the heat high and keep them spread out so they do not stew in the pan. Add the paneer and sauté, not stirring too often, over a moderate to high heat, until the onions and peppers have browned at the edges, around 4-6 minutes.
Remove from the heat (cool for 1 minute if the pan is really hot) and add the seasoning. Stir in for 1 minute. The retained heat in the pan will cook the spices.
Quickly warm the tortillas in a frying pan or the microwave oven. Spoon a quarter of the paneer mixture evenly along the centre of the tortilla; repeat with the rest of the tortillas.
Quickly top with the small dollops of the sour cream and salsa, making sure they are evenly distributed along the length of the vegetables. Add the paneer and avocado in the same way. Roll the tortillas, placing seam-side down on the plate. Serve immediately with the extra sour cream and salsa on the side.
