Caramalised Onion & Cider Chutney Cheese Bruschetta

Ingredients
  • 1 french stick
  • 50g Onion chutney
  • 1 Red Pepper – cut into slices
  • 1 Green Pepper – cut into slices
  • 1 Red Onion – cut into slices
  • 100g Cheddar with Apple Cider chutney Cheese- Grated
     
Method
  1. Place all of the prepared vegetables on a baking tray –drizzle with olive oil and place in a hot oven and roast until golden brown- set aside to cool slightly.
  2. Cut the French stick into pieces about 1-1 ½ inch thickness. Place them on a baking tray and lightly toast them on one side under the grill.
  3. Spread a thin layer of onion chutney onto each piece of bread ensuring that the chutney is spread right to the edges of the bread.Place a small amount of grated cheese on top of the chutney.
  4. Divide the roasted vegetables between the pieces of French stick..
  5. Serve with a green salad
