Frittata
Ingredients
4 eggs beaten
100g streaky bacon – grilled and chopped into pieces
200g Cotswold Cheese – grated
1 red pepper – chopped
1 green pepper – chopped Oven Temp: 200oC/Gas Mark 6
100g mushrooms – peeled and chopped
1 medium onion -diced
Olive Oil for frying
Method
Gently heat the oil in frying pan and add bacon. After a couple of minutes add peppers, onions and mushrooms and fry until the vegetable are soft.
Add in the beaten eggs and then place the frying pan in the oven for approx 10-15 minutes until the eggs are firm.
Add grated cheese to the pan and return to the oven for a further 5 minutes until the cheese has melted.
Serve immediately.
